Breakfast Fried Rice with Duck
· • 1 Tbsp vegetable oil
· • 3 eggs
· • 6 slices bacon
· • 2 duck breasts sliced thin seasoned with salt and pepper
· • 1 cup chopped yellow onion
· • ½ cup chopped green onion
· • 4 cups cooked white rice, chilled
· • 1 cup frozen peas and carrots
· • 2 Tbsp soy sauce
· • ¼ tsp salt
· • ¼ tsp black pepper
· • Green onion for garnish
Heat oil in a small or medium skillet over medium heat, and pour eggs into the skillet to scramble.
Cook bacon in a large skillet until crisp. Transfer bacon to a paper towel to drain.
Cook duck slices in bacon drippings in a skillet. Transfer the duck to a paper towel to drain.
Add yellow and green onions to skillet and cook over medium heat until tender (approximately 5 minutes).
Add rice and press into an even layer. Increase heat to medium-high; cook without stirring until browned (approximately 5 minutes). Add egg, bacon, duck, peas and carrots, and soy sauce. Stir gently until heated through. Sprinkle with salt and pepper. Garnish with green onions.
