  • Leftover jambalaya
  • 8 eggs, lightly beaten
  • 2 cups half and half or heavy cream (whatever you have)
  • 2 cups shredded Monterey jack cheese (really whatever you have)
  • ¼ cup chopped green onions

Mix egg and half and half in large bowl. Add cheese and green onions; mix until well blended. Set aside. Spread rice mixture evenly in bottom of greased 13 x 9 inch baking dish. Pour egg mixture over top.

Bake 30 minutes on 350 and let stand afterwards for 5 to 10 minutes before serving.
